Our head chef, Chef Marta Pech, has been with the restaurant since its inception over 20 years ago. Chef Marta has a deep understanding and appreciation of Yucatecan cuisine, and she brings that passion and expertise to every dish she creates. She has trained her team of chefs to carry on the traditions of Yucatecan cuisine, using fresh, local ingredients to create dishes that are full of flavor and history.

One of the most important ingredients in Yucatecan cuisine is achiote, a spice made from annatto seeds that give many dishes their signature color and flavor. Chef Marta and her team carefully prepare their achiote paste in-house, using a blend of spices and herbs to create the perfect balance of flavor and aroma.

In addition to traditional Yucatecan dishes, Chef Marta and her team also incorporate modern techniques and ingredients into their menu, creating dishes that are both authentic and innovative. They are constantly experimenting with new flavors and techniques, while staying true to the rich culinary traditions of the region.
